Bacon, Avocado and Sweet Potato Breakfast Wraps

When I crave bacon, I want to make sure it’s a safe, sustainable, good quality product that I’m eating. I was so happy to find out that DuBreton provides pork belly bacon, for people like me, to enjoy on days when the bacon craving is on overdrive! In this recipe, I marinated pork belly slices in ginger and garlic for a few hours. Feel free to use uncured, smoked bacon as well if you cannot find DuBreton products. You will see (in the photo below) the color of this bacon is different from what we usually see, because it is in it’s raw state. No smoking, or curing. This breakfast rocks…especially when you add a scrambled or sunny-side up next to it!

PREP TIME: 20 minutes
COOK TIME: 30 minutes


• 3 slices of bacon per person
• 1 avocado, cut into 12 slices
• 1 sweet potato, cut into fries (peel, slice into fries, then put in 350 oven for 25 minutes)
• 1 small package of sprouts (your choice)
• Dipping sauce of your choice (sweet chili, ketchup, aioli, etc…)


Cook bacon, drain on paper towels. Arrange avocado slice, sweet potato fries and sprouts on bacon slice and roll. Repeat steps until ingredients have been utilized.
