Paleo Pecan Pie

Filling:
6 dates
3 eggs
1/2 cup pure maple syrup
1 teaspoon vanilla
1/2 tablespoon coconut flour
2 tablespoons coconut oil
1 1/4 cups pecans

Pie crust:
1 1/2 cups almond flour
1/4 cup melted coconut oil

350 oven, mix crust ingredients in small bowl.  Press into pie dish to form crust. Bake 5 minutes.

Prepare filling by putting dates in food processor. Run until dates form a paste (be sure to remove pits). Add egg, syrup, vanilla, flour and oil. Blend until smooth.

Gently fold pecans into mixture. Pour filling into crust. Bake 30-40 minutes until pie is set. Allow to cool and enjoy!
